The Gateway to
Beef That Tastes the Way Nature Intended

Frequently Asked Questions

Q: Who is Tosca Farm?

A: Tosca Farm is a New Waverly, Texas based direct-to-consumer beef operation that raises grass-fed cattle and sells and ships meat products to consumers.

Q: What is grass fed beef?

A: Conventional beef is grain fed. At Tosca Farm, cattle are never introduced to grain in their diet since cattle don’t naturally feed on grain. Grass fed beef is higher in nutrients and Omega-3s, which are sourced from the grass. The Omega-3 content of beef decreases when grain is included in the cattle’s diet. Therefore, it is generally agreed that grass fed beef from Tosca Farm is a healthy choice.

Q: Where can I get Tosca Farm Beef?

A: The simplest way to acquire Tosca Farm Grass-Fed Beef is to order it online at www.toscafarmgrassfedbeef.com.

Q: How is Tosca Beef different from beef you buy at the grocery store or the butcher?

A: Tosca Farm cattle are grass fed and grass finished – as nature intended. Grass fed-grass finished is the most healthy, natural, and stress-free way to raise cattle. This natural process is beneficial to the cattle, to the land and ensures that the meat you eat has been grown the way nature intended. Conventional beef producers feed their cattle grains and corn, use hormones to speed the growth process and use antibiotics to counteract the spread of sickness in crowded feed lots. Cows are ruminant animals, genetically designed to eat grass. Tosca Farms does not believe in the use of antibiotics or hormones.

Q: How does the fat content of grass fed beef compare to other heart-healthy foods such as chicken?

A: In addition to being significantly lower in fat than grain fed beef, grass fed beef has less fat than dark-meat chicken or white-meat chicken with skin, and nearly the same amount of fat as skinless white-meat chicken breasts. This is great news for health-conscious individuals who have decided to forego the beef that they love because of health concerns.

Q: How do you cook Tosca Farm grass fed beef?

A: First, start with room temperature Tosca Farm beef. That will preserve juices because the meat has to spend less time in the pan coming up to temperature. Tosca Farm beef is lean, lightly marbled and lower in fat than conventional grain-fed beef. To bring out its great flavor we recommend cooking it at a slightly lower temperature and for slightly less time. So, unless a recipe specifies grass fed beef, reduce the temperature in the recipe by 50°F. Cooking time is 30% to 50% less than for conventional beef. Use a digital meat thermometer to get the most accurate reading. Also keep in mind that to achieve the desired temperature, remove the beef from the heat source when it is 5° to 10° shy of your target temperature - the residual heat will finish cooking the meat in about five to ten minutes. Let your beef rest at least 10 minutes before slicing. This allows time for the juices to circulate back into the meat. Slicing before it has properly rested sends the juices dribbling onto the cutting board. If you choose to grill our beef, add moisture by basting the meat with a delicious marinade. Please don’t use forks to turn the meat. Anytime you puncture the meat valuable juices flow out. Use tongs to turn the meat. For even cooking close the lid on your grill and resist the urge to check too often. When cooking burgers, don't press and pat the burgers with a spatula. This squeezes the delicious fat out, but doesn't make them cook any faster. Spatulas are just for flipping!
